Revana Terroir Series cabernet is Napa Valley fruit from three AVAs: Oak Knoll, St Helena, and Calistoga. The fruit cold-soaked for five days before going through a 16-day whole berry fermentation. The blend is 83/15/2/cabernet sauvignon, merlot and petit verdot. The nose is quiet (for Napa) with savoury black fruits and light spice. Dense sweet tannins mark the wine's rich textures, ripe with plenty of depth and complexity. The mid-palate is long and well-balanced with black olives, black currants flecked with floral and mineral notes. The alcohol is in check in what can described as the new Napa style. Big with a conscience. Revana uses four cabernet sauvignon clones and is aged in 85 percent new French oak.
