Francis Boudin ferments and ages this wine in stainless steel and bottles it without fining. It presents lovely scents of fresh apples and cream, then dives into darker cellar notes of parsnips and spicy ginger. As crisp and refreshing as cucumber, this is a tight young Chablis well worth cellaring.
