(13.5%; a blend of numerous varieties, including about one-third Chenin Blanc, plus Marsanne, Roussanne, Grenache Blanc and Gris, Clairette, old-vine Chardonnay, Viognier, Colombard, Palomino, Semillon and Verdelho; fermented in old foudres, then aged in concrete for a year and bottled at 18 months): Cool aromas and flavors of white plum, currant, red cherry and menthol. A rather plush white wine but lovely minerality and an element of fresh herbs gives grip to the middle palate and aftertaste. Finishes with flavor-rich phenolics that do not come from wood. Serve this blend with salmon or sushi.
