Domaine Chapel is a Beaujolais estate founded by David Chapel and Michele Smith-Chapel in the Cru Village of Régnié-Durette. The Chapels produced their first wine - a 2016 Juliénas “Côte de Bessay” - in partnership with the acclaimed Morgon estate Domaine Lapierre. Notes about product
Harvested from high density, gobelet trained vines. Whole cluster, semi-carbonic maceration with a low level of ‘tire’ due to thick skins. The mid-September temperature was cool because of the weather conditions and the high altitude of the cuvage. The juice remained between 15 and 16 degrees resulting in a slow fermentation over 20 days average. Each vat received a different level of press according to the density in order to create complexity in the final assemblage. No pipeage or remontage.
8 months of aging. Racked before bottling, 2g/ hl of sulfur added at bottling but nothing before. No fining or filtration.
