About this winery

Parés Baltà is a family owned winery in the Penedès region of Spain with traditions dating back to the 18th century. In 1790, the first vines were planted on the estate that now surrounds the winery. Today however, more than 220 years later, almost everything is different. Since 2000, the management has been in the hands of the two grandsons, Joan and Josep Cusiné Carol. Production notes

The Chardonnay fermented in stainless steel tanks for two weeks, at 16° C. The Pinot Noir fermented in new French oak barrels for 16 days. The second fermentation took place in bottle, following the traditional method. The wine aged in bottle for at least 30 months.

Tasting notes

Yellow color with light golden reflections. The wine shows a beautiful crown of fine bubbles. The nose offers complex and subtle aromas with delicate notes of fresh almonds, hazelnuts, honey, orange blossoms and fresh figs. Fresh and round, the palate reveals notes of ripe, jammy fruits.

Dark golden yellow. Intense bouquet of dried fruit, apricot, raisin, honey blossom and brioche notes. The palate is complex powerful, structured, with salty minerality, smoke and hints of bitter chocolate. Broad, vinous character with great length. Substantial food wine.

There's hardly a top-shelf 2010 Spanish wine that didn't excel, and this blend of Xarello, Chardonnay and Pinot Noir is no exception. Aged, mature aromas of briny fruits and yeast are integrated and smooth. A citrusy palate is vibrant, while this tastes of grapefruit and tangerine. Lightly buttered toast and white pepper notes appear on a long-lasting finish.

September 2021 (Vintage 2012)

Mainly Xarel·lo, with 9% Chardonnay and 10% Pinot Noir, all farmed biodynamically. Golden in the glass, with fine bubbles. Lots of interest here: freshly cut lemons, grapefruit pith, herbs, nuts, fennel, with an underlying stony minerality. Brisk acidiy and a crisp, mouthwatering finish. A great aperitif style.

A golden-hued Cava, with a rich nose of praline and dry spice notes accenting the flavors of crystallized honey, toast point and orange peel on the palate. Firm and distinctive, featuring a fine, satiny mousse that carries a streak of salinity on the finish. Drink now through 2021. Tasted twice, with consistent notes.

Très bon mousseux catalan, issu d’un assemblage de chardonnay, aux deux tiers, complété par du pinot noir. Couleur jaune assez foncé, nez à peine brioché, citronné légèrement. En bouche, c’est ample et rafraîchissant, avec un côté glycériné qui donne à penser que le vin a été dosé alors qu’il s’agit d’un « zéro dosage ». On peut donc affirmer qu’il est bien sec. Prix mérité.

Plutôt que les traditionnels cépages blancs catalans, la famille Cusiné a choisi de miser sur le chardonnay et le pinot noir pour son cava haut de gamme. Le vin est fermenté en fûts de chêne français et les bouteilles profitent d'un vieillissement de 30 mois sur lattes avant le dégorgement. Il en résulte un excellent vin mousseux au caractère "rancio", mais pas dépourvu de fruit; vineux, porté par une bulle tendre et persistance. Bonne longueur en bouche.

Deep gold. Rich, toasty aroma. Golden fruit – yellow plum, orange zest and apricot. Deep and inviting. Toasty and savoury on the palate, the toastiness giving a lightly charred note on the finish. Spiced and golden on the palate. A wonderfully rich, complex and bone-dry, fresh cava. Powerful, almost meaty in its density (not in its flavour). A wine-drinker's cava.
