Spontaneous fermentation in steel tanks, followed by slight maceration in contact with the skins. Aged for 6 months is stainless steel tanks in the lees before bottling.
Clear hints of hawthorn flowers, green apple, white almond, wild cherry to the nose. In the mouth, it is tasty, fresh, savory, able to stimulate the palate thanks to its sharp acidity and hints of small red fruit.
Bright pale pink colour. Floral nose, elderflower and meadow herbs, with some cherry behind it. Precise and straightforward on the palate, juicy with animating acidity, delicate texture, spicy finish, good length.
