About this winery

Founded in 1825, Domaine Faiveley is one of Burgundy's greatest domaines. Originally the company was a classic negotiant business, based in Nuits St. Georges and engaged in the buying and selling of wine but not the production of it. After seven generations of steadily acquiring properties throughout the Cotes de Nuits, the Cotes de Beaune, Cotes Chalonnaise and now Chablis, the Faiveley family have established themselves as the most important vineyard owners in Burgundy, with 125 hectares of...

Product notes

This village lies between Meursault and Chassagne-Montrachet and offers exceptional terroirs in which the Chardonnay grape variety thrives. Vines have been cultivated here since the 12th century although it was not until 1879 that Puligny added its name to that of the more reputed Grand Cru: Montrachet.

Production notes

The grapes were harvested and sorted by hand. The musts were extracted using a pneumatic press before being settled. Vinification lasted for 4 weeks and took place in French oak barrels (less than a third of which are new oak) in the estate cellars at consistent natural temperatures and hygrometry. The wine was then aged in barrels for 14 months during which it was stirred regularly in order to keep the lees in contact with the wine. This resulted in excellent tension and aromatic complexity combined with a smooth and delicate palate.

Tasting notes

The nose will entice you with its subtle and seductive aromas of white flowers combined with a touch of vanilla and fresh hazelnut. The palate offers a direct, mineral attack which evolves to reveal rich notes of vine peach, exotic fruits and salted caramel. Serve with Pan-fried scallops, crayfish, and chicken breast in a creamy muhsroom sauce.
