About this winery

Sokol Blosser is one of the pioneering estates of the Oregon state wine industry. In 1971 when Bill Blosser and Susan Sokol Blosser began converting an old prune orchard into a vineyard they became one of five bonded wineries in the region. Production notes

The same varietals from Evolution white were harvested, processed and fermented with sparkling wine production in mind. These special wines were then blended into a single interesting base wine, put into bottle, and a little more yeast was added for an additional fermentation in the bottle. This fermentation resulted in the beautiful bubbles that we all look forward to when opening and sharing a sparkling wine. After fermentation in bottle is complete, each bottle is individually opened to put a little splash of sweetness in to create a balanced wine.

Tasting notes

This Evolution Sparkling is designated as a Brut level of sweetness. It comes across as dry due to the bubbles and acidity in the finished wine, making a vibrant wine that dances on the palate. It expresses aromatics of apricot, green apple, Bosc pear, with hints of white peach and citrus. The mouth feel is slightly creamy from the secondary fermentation in the bottle, with a light flintiness. Dry on the palate, it finishes crisp and clean.
