(from 3 parcels totaling .49 ha that come from both sides of the appellation; 50% wood). The nose is difficult to read as there are still residual lactic nuances along with ample wood toast. The palate impression is much more interesting with its sappy and caressing texture that is highly seductive while displaying a lovely sense of refinement on the compact, moderately dry and balanced finale. This should cleanup nicely and repay up to a decade of keeping.

(from a 2.5 ha parcel of 35+ year old vines – two thirds of the blend is from Chapelot, and the remainder is from Pied d’Aloup and Montée de Tonnerre proper; the Pied d’Aloup vines were planted in 1935 ; 100% stainless). An exuberantly floral-suffused nose displays additional aromas of tidal pool, citrus zest and plenty of iodine character. The racy and notably finer, if less powerful and generous middle weight flavors flash evident minerality on the youthfully austere bitter lemon-inflected finish that goes on and on. Excellent potential here.

(from 4 different parcels of 35+ year old vines that total 2.77 ha; 20% old wood). Here too there is just enough wood influence lurking in the background of the vaguely exotic aromas of white peach, apricot and oyster shell to merit pointing out. There is impressive volume and mid-palate density to the larger-bodied and solidly powerful flavors that are rich to the point of opulence before concluding in a sappy and lingering finish where the only nit is a touch of warmth.

The village-level Chablis from Billaud-Simon is a classic expression of the terroir, with aromas of lemon peel and white flowers and a fine, silky texture. The acidity is balanced if not pronounced, giving the wine finesse without a lot of tension. Régisseur Olivier Bailly notes that this final year of organic conversion was a struggle with the weather, but he is pleased with the final blend, which included 25% cask-fermented wine.

Domaine Billaud-Simon has been producing Chablis wines since 1815 and are known for their mineral driven, pure, elegant and fresh Chablis. The Domaine was purchased by the Faiveley family in 2014 and since then they have changed very little about the viticulture and winemaking practices to maintain the classic Billaud-Simon style. The Domaine has 17 ha across 4 Grand Cru’s, 4 Premier Cru’s and village plots.
