Champagne from Ayala & Bollinger

Today’s offer features two notable and historic Champagne houses from the village of Aÿ.

Under the same ownership since 2005, Bollinger and Ayala in fact have been linked since World War I. When the Germans invaded Champagne, the Ayala family escaped to the UK and asked their neighbours, the Bollinger family to keep them posted while German soldiers occupied their château. In 2005, the Bollinger family purchased the Ayala estate and today it has been revitalized to its former glory, with the defining dry racy style that focuses on Chardonnay and stainless steel fermentation – a style that couldn’t be more different from Bollinger’s higher percentage of Pinot Noir and neutral oak barrel fermentation.

Dried pear, stewed Bramley apple and nectarine melt into the depths of reserve wine complexity, with chestnut honey and perfectly pitched savoury interest. It's surprisingly silky, the texture surprisingly weightless, the shape rounded and cushioned rather than strict or driving. A highly rewarding Champagne, ready to drink but with interesting potential to evolve over the next five years. 100% Pinot Noir, predominantly from Aÿ, with support from the villages of Tauxières and Verzenay.
