Elegant & Fresh Champagne Ayala

Founded in 1860 by Edmond de Ayala, Champagne Ayala is a pioneer of drier style champagne. In 1865 the house made a bold move and released a champagne with a dosage of 21 g/L. At that time, dosage was traditionally more than 150 g/L.

On now until March 4, 2023 Champagne Ayala Brut Majeur is $5 off per bottle at BC Liquor Stores. Also available is the Rosé Majeur.

The Champagne Majeur Brut is inviting, with ripe aromas of lemon balm, pear, and fresh baked bread. The mousse fills the palate and cleans up with pithy orange, parmesan, and dusty chalk. I like this for its lightly savory touch and a bit more concentration.

The NV Champagne Majeur Brut Rosé pours a nearly electric pink hue with aromas of strawberry, white peach, and bread dough. It is medium-bodied, although it is ripe on the mid-palate, with raspberry fruit, melon, and a light saline touch. It has a pretty and easy-drinking style to enjoy over the next 8-10 years.

Champagne AYALA is one of the longest-established champagne Houses; it has been based in Aÿ, since it was founded over 150 years ago. It has always been a small, independent and family-run business. In 2005 the Bollinger family bought this fine estate, with the intention of restoring it to its former glory. This was the start of a resurgence for Champagne AYALA, with complete restoration of winemaking facilities and the arrival of new staff.
