(from a 2.5 ha parcel of 35+ year old vines – two thirds of the blend is from Chapelot, and the remainder is from Pied d’Aloup and Montée de Tonnerre proper; the Pied d’Aloup vines were planted in 1935 ; 100%
stainless). An exuberantly floral-suffused nose displays additional aromas of tidal pool, citrus zest and plenty of iodine character. The racy and notably finer, if less powerful and generous middle weight flavors flash evident minerality on the youthfully austere bitter lemon-inflected finish that goes on and on. Excellent potential here.

This Mont de Milieu is an arresting wine on the initial attack, with robust aromas of grapefruit, quince and spice. The texture is ripe and powerful, with balanced acidity and enough extract to linger on the palate. The grapes come from 2.77ha of vines in this right-bank terroir; they are gently pressed as whole clusters and mainly fermented in cask. The wine is pleasant now but should open considerably with a bit of age and will likely drink well for years to come.

(from a 2.95 ha holding in Séchet, Roncières, Châtains, Mélinots and Vaillons proper). Here too there is just enough wood to mention framing the cool and bright aromas of mineral reduction lemon confit and refreshing sea breeze nuances. There is excellent density, especially for the vintage, to the middle weight flavors that are rich and caressing while maintaining good verve that carries over to the clean, dry and youthfully austere finale. This could use more depth but the fine potential is evident. Lovely.

This luxurious, rich Chablis merits its name, 'Golden Head', with its rich apricot and quince nose, hints of cream and spice and a dense, sensual texture. A slight point of pleasant bitterness brings freshness on the palate. This wine will likely please lovers of a Côte d'Or style, and although it lacks the chiselled character loved by some, it has its own unique charm. The grapes are from nearly 3ha of vines in the L’Araignée and Le Bas de Chapelot parcels, located at the base of premier cru Montée de Tonnerre.

The village-level Chablis from Billaud-Simon is a classic expression of the terroir, with aromas of lemon peel and white flowers and a fine, silky texture. The acidity is balanced if not pronounced, giving the wine finesse without a lot of tension. Régisseur Olivier Bailly notes that this final year of organic conversion was a struggle with the weather, but he is pleased with the final blend, which included 25% cask-fermented wine.
