Champagne Bollinger

At Trialto, we’re fortunate to partner with exceptional wineries that embody wines of People, Place and Time.

Since 1884, Champagne Bollinger has received the Royal Warrant from Britain’s Royal House and today's featured wines are reigning examples of the family-owned Champagne House's excellence.

We can go into detail on how they meticulously riddle and disgorge all bottles by hand or how they are Pinot Noir driven. We can also talk about their continued use of traditional neutral oak barrels over stainless steel or why all reserve wines are aged in magnums with natural cork closures, but if there's one thing to remember it's Bollinger's respect for terroir and the time it takes for these wines to develop to these extraordinary levels.

Made only from exceptional years and only from Grand Crus and Premier Crus, La Grand Année 2015 is aged on lees for 7 years while Bollinger R.D. saw more 14 years on lees - that's four times longer than the minimum requirement for vintage champagne.

Note, if the winemaker decides after the aging period it doesn’t meet R.D. standards, then the wine goes into the house Special Cuvée, which attests further to the supreme quality of all their wines.

Enticing, fragrant aromas of toast, lemon zest and an earthy-smoky nuance lead to a palate of subtle Bosc-pear, mango, papaya, even pineapple flavors. Lifted by fresh acidity on the medium-bodied palate, the wine keeps unfolding in toasted walnuts, honey and a dash of bitter marmalade. It’s mouth-filling, alive with acidity and full of finesse. Drink or hold.

Amazing aromas of sweet uncooked pie crust with almonds. Then you smell dried apples, apricots and pineapple. Grilled fruits, too. Full-bodied. So tangy and energetic with sizzling acidity and creamy tannins. Flavorful and lightly oxidized at the finish. Smacking my lips. Agile. Ginger and spices. A touch of bitter complexity with some salinity. Extreme character that grabs your attention. 13 years and six months aging on the lees with cork. 3 grams dosage. 71% pinot noir and 29% chardonnay.
