Delicious organic, biodynamic wines
Founded in the 1930s in an area making wine since the 1700s, Parés Baltà is family-owned winery producing cavas and still red and white wines. Leading the charge as oenologists are sisters-in-law Maria Elena Jimenez and Marta Casas. While the masses have surged towards modern winemaking, they returned to more traditional methods. With a minimal intervention approach, the wines are delightfully distinct, expressing varietal typicity while reflecting terroir.
Spread over five premium estates with 176 hectares of low yielding vines, the vineyards are at an altitude between 170m and 800m, enjoy a balmy microclimate, and are located only 10 to 50 kms from the Mediterranean sea in the Penedès and Cava appellations. Vineyards are farmed organically since 1790 and biodynamically since 2012.

This most recent cuvée of Pink is a step up from the usual great value one can expect from Parés Balta. An absolute delight with generous aromas of rosebud, pink grapefruit skin, red cherry and lavender. The palate is toasty and lightly creamy due to fine bubbles producing a smooth mousse. Well-balanced, voluminous and widely appealing. Great value. Tasted December 2020.

Mainly Xarel·lo, with 9% Chardonnay and 10% Pinot Noir, all farmed biodynamically. Golden in the glass, with fine bubbles. Lots of interest here: freshly cut lemons, grapefruit pith, herbs, nuts, fennel, with an underlying stony minerality. Brisk acidiy and a crisp, mouthwatering finish. A great aperitif style.

This an organically grown cava from fairly high altitude sites. It is firm, dry and fairly intense in flavour with interesting aromas of rye bread, sunflower or pumpkin seed, green olive and green pear. Something very Mediterranean about the nose. It is mid-weight, solid, firm and even, with very good to excellent length. Tasted December 2020

A natural, 100% xarel·lo orange wine, ecological, macerated and fermented in amphorae of local clay. The nose is fruity and elegant, with a background of baked apple ending with a subtle banana aroma. Honeyed and structured but very delicate, cured lemon and peach peel. Nicely structured on the palate, with a lot of texture thanks to the skins that have given it tannins.
