Francis Ford Coppola has a long family history with wine making. He was first exposed to the wine making process while growing up in New York. Grapes for this Zinfandel are sourced from vineyards that use different growing practices. The first combines traditional farming practices along with dry farming of mature vines that are head-trained, spur-pruned, and severely thinned in the spring to produce low yields. The other method utilizes bilateral cordon spur pruning, on-wire trellising, drop irrigation, and carefully manicured canopies.
Half of the fruit was crushed whole, fermented in open-top fermentors for maximum color extraction and flavor enhancement. Aged for 17 months in French & American oak; 20% new barrels.
Aromas of sweet spice, wood, tobacco, and whiskey barrels meld seamlessly with flavours of cherries, blackberries, cloves, and cocoa.
