Located in heart of the Sancerre region is Domaine Vincent Delaporte and Sons, a family business which has been passed from father to son since the 17th century. The winery is located in the charming village of Chavignol, recognized as, perhaps, the prettiest village in the region and for its famous goat cheese. Product notes
The Delaporte red wine is produced from pinot noir vines which range in age from 21 to 40 years old. Seventy percent of these vines are planted in clay with flints soil. The remaining thirty percent of the vines are planted in limestone soil. These vines are grown according to reasoned culture principles, which provide a maximum of respect for the ecosystem and the environment.
Production notes
• The grapes are 100% handpicked and are sorted manually on a sorting table.
• Pre-fermentation maceration is carried out in stainless steel vats for five days at a temperature of 10 °C.
• Fermentation is then carried out for twelve days at a temperature of 25 °C, with daily stirring, tamping and constant sampling, in order to extract the maximum fruity flavours, color and tannins contained in the skins.
• Malolactic fermentation continues in 228 litre barrels of Tronçais oak for 50% of the harvest and in stainless steel vats for the other half.
Tasting notes
The deep red wines are a beautiful purple ruby colour and they develop very ripe red fruit flavours (cherry, blackberry and raspberry).
Upon tasting the wine, the aroma is intense and flowing. The scent of red cooked fruits and torrefaction (significant roasted qualities) dominates. One can also detect a point of graphite and a nuance of cinnamon. Very round and very flexible as it enters the mouth, it affirms itself with persistence then tight tannins and then with sharp edges. Very beautiful retro-olfaction with flavours of smoke and plum. This wine is ready to drink but could also be laid down for some years.
As a young wine, it can be served cool at (12 °C) with charcuterie, fish with firm flesh as well as white meats. This wine will also go very well with roasted meats. It will reach its full flavour at the end of three years (serve at 15 °C) with game and certain cheeses.
