Founded in 1825, Domaine Faiveley is one of Burgundy's greatest domaines. Product notes
Situated on the northern Nuits-Saint-Georges hillside, halfway up the slope, this climat produces wines characterised by their delicate and elegant aromas. The name "Aux Chaignots" suggests the presence of an old oak forest known as a "chasne" in ancient French.
Production notes
"Aux Chaignots" very probably indicates the existence of an old oak woodland designated by the word "chênes" in French today, or "chasnes" in Old French.
The hand-picked harvest goes through a short prefermentary maceration before the vinification. During the 18-20 day vatting period, the wine is kept at low temperature. It is then matured in oak barrels for 14 to 16 months, in 19th century vaulted cellars which provide ideal conditions for raising wines. The proportion of new oak, which is subjected to variations according to the vintage, represents on average two thirds of the cuvée. The barrels come from high-quality barrel makers and have been rigorously selected for their fine grain and light toast.
Tasting notes
A fine dark ruby colour. This wine opens with red-fruit aromas on the nose, mixed with fiery, woody and smoky notes. On the palate, it is rich and supple. It’s a wine of very beautiful substance, well-balanced between finesse and strength. The structure of the blended tannins makes this wine pleasantly harmonious.
