Product notes

Fruit for this Champagne was selected from 100% Grand Crus villages, including Chouilly, Aÿ and Le Mesnil-sur-Oger. Ayala encourages the use of organic techniques in the vineyards.

Production notes

Using traditional winemaking techniques, Cuvée Perle d’Ayala aged 9 years on its lees in cellar after disgorgement under cork in order to allow for controlled oxidation and development of complex aromas and flavors.

Tasting notes

A nutty complexity that is balanced by a wonderful perfume of peach, lemon and lime aromas. The palate expresses rich pastry notes and a full, round finish.

July 2018 (Vintage 2006)

A chardonnay dominant cuvée (80 per cent) that has rested on lees for more than eight years. It delivers attractive, nutty complexity with an array of peach, lemon and lime aromas. The palate has attractive, pastry-like flavors with lime curd and a fleshy, smooth finish.
