About this winery

Parés Baltà is a family owned winery in the Penedès region of Spain with traditions dating back to the 18th century. In 1790, the first vines were planted on the estate that now surrounds the winery. Today however, more than 220 years later, almost everything is different. Since 2000, the management has been in the hands of the two grandsons, Joan and Josep Cusiné Carol. Production notes

Hand harvested. After a light pellicular maceration of 4 hours, the grapes are gently pressed and fermented in stainless steel vats for 18 days at an average temperature of 16 °C. After fermentation, the wine remains in contact with the fine lees from the fermentation for 3 months with daily bâtonnage to put the lees in suspension for several minutes a day. Wine suitable for vegans. Wine made from biodynamic grapes and minimal intervention in the cellar.

Tasting notes

From the flagship variety of the Penedès, the xarel-lo, comes this organic single-varietal wine. Calcari brings together the purest and most sincere expression of this ancestral variety, native to our territory and strongly rooted in our winemaking tradition. Its characteristics give it great versatility, making it a variety suitable for the production of long-aged sparkling wines or wines with minimal intervention such as Calcari, a wine that allows us to see its great expressive capacity and its mineral character.

June 2020 (Vintage 2019)

Lovely aroma of ripe pears and creamy stone fruit, really creamy, somehow like puréed fruit with a touch of vanilla even though the wine is unoaked and tangy. The lees have given a richness on the nose and a touch of spice on the palate. Bags of lovely fresh yet rounded fruit and a surprising intensity on the palate for a wine with such moderate alcohol. Fresh aftertaste that is more swtony than fruity.
