The third generation of the Cusiné family is now in charge of Parés Baltá, a winery located in Penedès. They biodynamically farm five vineyards (about 200 hectares of vines), mainly on the plains and in the Espacio Protegido del Foix, with which they make a range of styles. Winemaking is in the hands of Marta Casas and María Elena Jiménez, the wives of Josep and Joan Cusiné, who oversee the viticultural side. In recent years, they have focused on innovative wines with styles like Brisat (orange) and varieties like Sumoll, while their Cavas are more classical.

Delicate, smooth bubbles with pure red fruit aromas and flavours that bring more complexity to this fresh and crisp sparkling wine. Pronounced notes of strawberry and raspberry that follow through onto the palate and develop into a wonderfully intense and concentrated pastry finish. Very reminiscent of the sun-soaked seasons.

The mandarin and spice notes are lifted by the white flower and pepper aromas from the Gewurztraminer skins. A medium body wine with a sleek mid-palate and fresh fruits such as mandarin, pomelo, and pear. The floral notes from the Gewurztraminer make an appearance giving the wine a bright and lively finish. A very fine and delicious orange wine.

Rich, golden colour in the glass. Restrained nose with aromas of candied orange peel, dried pineapple and apple rings, followed by roasted spices, nuts and mineral notes. Balanced on the palate, with a fine mousse, mineral notes and ripe acidity. Medium-long finish with roasted notes.

About PARÉS BALTÀ
Parés Baltà is a family owned winery in the Penedès region of Spain with traditions dating back to the 18th century. In 1790, the first vines were planted on the estate that now surrounds the winery. Today however, more than 220 years later, almost everything is different.
Since 2000, the management has been in the hands of the two grandsons, Joan and Josep Cusiné Carol. They have brought new and fresh ideas into the company, but also show respect for its tradition and have guarded the heritage. The wives of Joan and Josep, Maria Elena Jimenez and Marta Casas are the winemakers and oenologists. They have continued to develop new wines and increase the focus on quality. Today, Parés Baltà produces a wide range of high quality wines and cavas that have been acclaimed both nationally and internationally.
The cultivation of their vineyards with respect to the environment is a key point in Parés Baltà’s sense of identity. All their wines have an organic certification and the vineyards are certified biodynamic by Demeter. The vineyards are dry-farmed and all wines are vegan. They have their own flock of sheep for fertilizing the vineyards as well as their own bees for pollination during the flowering season.
Some of the vineyards are on century old terraces that are completely isolated and surrounded by nature and the vineyards frequently receive visits from wild boars, foxes, rabbits and Bonelli’s eagles. 2000 years ago, the Iberians cultivated clay from the mountain vineyards to make amphorae and the team at Parés Baltà now do the same for a range of their old vine Xarel-lo wines.
