The H Billiot estate is comprised of 5 hectares of Grand Cru vineyards spread across 18 different mid-slope parcels of limestone in Ambonnay. The 2014 Champagne Millésime Brut is more restrained and pure, with fresh white flowers, croissant dough, and marzipan. The palate is zippy and persistent, with a chalky texture and notes of Meyer lemon as well as orange rind. A bit of savoriness with its salinity comes through and makes for a food friendly expression in the range.
