Pais blend from 4 terroirs mostly from the area of Nipas (where the winery is located) where you'll find black silty sandy basalt (like Etna) and silty clay granite. Around 12,000 bottles per year are made.
Hand harvested. Sourced from dry-farmed different vineyards: 2 granitic vineyards in the area of Guarilihue Alto and 2 black silty basalt vineyards in Ñipas. 60% whole cluster fermentation with indigenous yeast in open oak and steel tanks. Aged in concrete and large oak casks for 1 year.
