About this winery
Domaine EdeM was born from a desire to offer wine like enjoyment without alcohol, inspired by Elena Maza, the Catena family matriarch who asked her daughter to create something lighter she could enjoy. Under the direction of Dr. Laura Catena, the Catena Institute of Wine combined scientific expertise in sensory analysis and wine chemistry with a deep respect for flavour and tradition to develop this range of low and no alcohol wines. Product notes
Sparkling non-alcoholic made from top-quality Chardonnay grapes infused with botanicals. Rich and fruity on the first sip, with hints of eucalyptus, orange peel and cocoa husk. Serve very cold, between 7-9 °C. With a slice of orange and/or ice cubes. Enjoy during sunsets, to toast, or as an apéritif before meals.
Production notes
Chardonnay grapes are sourced from our mountain vineyards in the Uco Valley. The verjus is made from early harvest grapes, collected during the first week of January and is kept cold throughout the winter. In June, the winemaking team at the Catena Institute of Wine infuses botanicals. Once the master blend is defined, the process of injecting the fine bubbles begins.

Sweet and fruity entry. Freshness highlighted by fine bubbles and notes of wormwood, orange peel and cocoa shell. Citrus with an herbaceous and spicy finish. Eucalyptus, Cloves, Orange Peel, and Carqueja.
